Another experimental lot from Yuki Minami! This is the first year she has offered an aerobic natural lot.
For this experiment, Yuki applied a technique called leira (Portuguese for ‘windrow’), piling cherries thick and high on a patio or raised bed. It is a technique more often used during drying to slow down the process.
For this lot, Yuki has used the leira piling method for fresh cherries. The coffees are piled in a line of 40 cm wide and 30 cm high. After 62 hours of fermentation in this formation, the pile is scrambled and a more conventional drying method follows.
Lovely and juicy, with present but soft confectionary fruit red fruit impressions (ripe cherries & red apple).
