Our second year sourcing from the Shwe Taung Thu Co-Op. Last year we offered two natural lots produced by member smallholders from the Ga Naing war and Pway Na Phar villages. This year, we look forward to this lot from smallholders around the Sin Net Chaung Village in Ywangan.
Like other specialty lots we’ve sourced through Sawbwa Coffee and Pink-Headed Duck, bean uniformity and cup clarity stand out on the cupping table.
Fully ripe cherries are dried on raised beds Each lot is separated by day and, after slow drying is complete to ~12% moisture levels (between 16-30 days depending on the village altitude), they are sent across town to Amayar Women’s Processing Facility in Ywangan for further wet and dry milling.
Generously berry forward but with an understated nuance in its ferment. Tons of sweet red and dark fruit impressions in the cup.
