This lot is technically a honey process. But for the first 48 hours in-cherry fermentation took place the help of lab microbes, then followed by partial dry pulping and slow raised bed-drying over 23 days.

Clean, balanced cup with tons of red fruit impressions (ripe strawberry) and a touch of dried fruit (fig, raisin).
