Fourth-generation Japanese Brazilian producer Yuki Minami should be a familiar name to New Math’s regular customers.
In the past couple of years, especially, our sourcing focused on her experimental microlots like her fruit co-ferments. But this year we opted for Yuki’s main production coffee, a natural red catuai lot consisting of cherries from two farms she runs with her father Niculau.
A classic Brazilian cup, presenting a soft nuttiness reminiscent of cashew and nougat with a dried fruit finish. We love drinking this both as a straight espresso as well as in a macchiato or cortado.
